How to Ferment Your Own Kimchi at Home Like a Pro

Kimchi is a traditional Korean dish that has become increasingly popular worldwide. It is a spicy, fermented vegetable dish that is enjoyed as a condiment, side dish, or even a main course. If you’re a fan of kimchi and want to try making your own at home, here are some easy steps to follow.

Ingredients:

1 head of napa cabbage
1/2 cup of garlic, minced
1/4 cup of ginger, minced
1/4 cup of fish sauce
1/4 cup of Korean chili flakes
2 tablespoons of sugar
1/4 cup of salt
1/2 cup of daikon radish, thinly sliced
2 green onions, sliced
1 carrot, julienned

Instructions:

1. Cut the cabbage into quarters lengthwise, removing the tough stem. Cut the quarters into bite-sized pieces.

2. Place the cabbage in a large bowl and sprinkle salt over it. Use your hands to mix the salt into the cabbage, making sure every piece is coated. Let it sit for an hour.

3. Rinse the cabbage thoroughly under cold water. Drain and set aside.

4. In a separate mixing bowl, mix garlic, ginger, fish sauce, Korean chili flakes, and sugar. Mix well.

5. Add the daikon radish, green onions, and carrot to the mixing bowl. Mix well until everything is coated in the sauce.

6. Add the cabbage to the mixing bowl. Mix until everything is evenly distributed.

7. Pack the mixture tightly into a large jar or several smaller jars. Make sure the vegetables are fully submerged in the liquid.

8. Close the lids of the jar(s) and let the kimchi ferment at room temperature for a few days to a week, depending on your taste preference.

9. Check on the kimchi daily. Open the lid(s) of the jar(s) to let out excess gas and press down on the vegetables to make sure they stay submerged in the liquid.

10. Once the kimchi has reached your desired level of fermentation, transfer it to the refrigerator and store it there for up to a month.

Voila! Your homemade kimchi recette is ready to enjoy. You can use it as a side dish or a condiment on top of rice dishes or sandwiches. The beauty of making your own kimchi at home is that you can customize the cabbage to your liking and experiment with different flavors and vegetables.
