9. Check on the kimchi daily. Open the lid(s) of the jar(s) to let out excess gas and press down on the vegetables to make sure they stay submerged in the liquid.
10. Once the kimchi has reached your desired level of fermentation, transfer it to the refrigerator and store it there for up to a month.
